骨付きのポークバット(肩肉)だよ、ロースじゃない。前の晩にラブをすり込んで、250〜275°Fで燻製して皮が固まるまで待つ。165°Fくらいで包んで、203°Fまで上げると、串がバターみたいにスッと入る。1時間休ませてからほぐす。8ポンドで10〜12時間ってところかな。
Bone-in pork butt (the shoulder), not loin. Rub it the night before, smoke at 250-275 till the bark sets, wrap around 165, then take it to about 203 where the probe slides in like butter. Rest an hour before you pull it. Figure 10-12 hrs for an 8 lb butt.

You can low and slow without smoke, but you cannot smoke it anyway except low and slow. In the US we use "Boston butt" (I don't know why it's called that). It's a cut from the upper part of the front shoulder. Sauce/spice to your taste.

Smoked low and slow. Pork shoulder is a good cut to use. The type of wood you use can make a big difference. It would be interesting to see what type of regional spins Japan would put on it. Sauce is optional but can elevate things quite a bit. An example I'd like to see is how different types of tea leaves could be incorporated into the cooking process. Using them in the wood as a smoking element, or in a dry rub, or perhaps used in a sauce. Lots of interesting possibilities out there. I also find that a katsu sauce glaze on pork ribs is very good.

Smoked for hours will give the deepest flavor, but isn't an option if you don't have space. Alternative is an Instant Pot with the spices you'd prefer and a little bit of Liquid Smoke. I do Kalua Pig that way, with just salt and smoke. Pork "butt" which is shoulder roast.

Throw some butter or olive oil on top and cover with foil. After 20 minutes, add vinegar sauce and mix. Another 10 minutes and you’re good. Bonus: makes for a great jacket potato. Or tacos. Cheers!

Every time something becomes a 'thing' in Japan, it gets very expensive in the US. Beef tongue used to be cheap and now it's hard to find since becoming a 'thing' in Japan.

Low and slow for tenderness, smoked at least a little it that is possible, choose a cut of pork that has some fat marbling through it. And barbecue sauce—yes!!! There are a million recipes out there, they vary by region. I love that Japan is starting to love pulled pork. You have such incredible food there, it’s quite a compliment!❤️

Oh, you need to come visit North Carolina for a cultural exchange for this one lol our pulled pork barbecue is the best in America. I happen to prefer brisket, which is a Texas thing but I do live in North Carolina and our pulled pork is incredible. It’s smoked low and slow for as long as possible and it’s served with a vinegar based sauce that enhances the smoke. So delicious.

一番いいのはドライラブをしてアップルウッドで約12時間燻製すること。燻製器がなくてスロークッカーやクロックポット、オーブンで調理できるなら、オーブンなら同じドライラブを使う。クロックポットやスロークッカーなら最初から好みのBBQソースを使ってもいい。
Best is dry rub and smoke for around 12 hours using applewood. If a smoker isn't available and you can cook it in a slow cooker, crok pot, or oven. If oven use the same dry rub for the oven. In the crok pot or slow cooker you can use your preferred bbq sauce from the start.

Regardless of the cooking method (smoker, slow cooker, oven) low and slow is an absolute must. If pork shoulder is cooked at too high of a heat it will be way too tough and it can't really be pulled apart. Try to keep it below 105 Celsius.

BBQソースは主に好みの問題だね。うちの家族は約20種類の材料で自家製ソースを作る。主にケチャップとマスタードを混ぜて、ルイジアナホットソース、ピクルス液、ウスターソースを少し加える。妻はシーズニングソルトだけで食べてたよ。
Barbecue sauce mainly comes down to preference, my family makes our own sauce with around 20 ingredients. Mainly it's ketchup and mustard mixed together with a touch of Louisiana hot sauce, pickle juice and Worcestershire. My wife used to eat hers with just some seasoned salt.
